My Passion for Creation

I love creating things which was a major draw for me to get into website development. Most of my interests involve some sort of creation. Building beautiful and useful things from wood is a lifelong passion. I guess that’s because I derive great satisfaction from taking raw materials from a non-descript starting point and transform them into something that is pleasing in both form and function.

Creation Driven by Innovation

For me, nothing brings creation and innovation together in a more satisfying way than cooking. I’m always experimenting with combing the rich palette of flavors nature provides us with to enhance traditional recipes or just throw out the rules and create something new. In my kitchen you’ll find a robust inventory of spices and staples as the raw materials I employ. I applaud the kind of “out of the box” culinary creation that lead to someone adding salt to caramel, giving us a whole new taste sensation no one had dared to try before. I’m the kind of cook that is forever tweaking the traditional and I’ve always said that a recipe is just a good starting point. Add something sweet or a little heat can make an old favorite a fresh new treat. Biscuits & Gravy has always been my go to comfort food and I spent years refining my sausage gravy recipe to my ultimate satisfaction. That was until I developed a distressing need to better control the carbs I eat. Adult onset diabetes pretty much eliminated B&G from my diet until after an exhaustive search for carb friendly ingredients and a load of experimentation I finally devised a recipe that transformed my deeply satisfying recipe from 65 grams per single biscuit serving to just 10 grams without losing either taste or texture.

No Secret Recipes Here

There are those who keep their culinary creations a closely guarded secret, but not me. I love evolving favorite dishes and then sharing the results with anyone who wants to to take a stab at my twist on things. This page is a just a primer for my love of cooking but you can find a complete list of recipes here. When I publish PDF files to share my recipes I have a slug I put in the footer which is a quote I love from George Bernard Shaw, “There is no love sincerer than the love of food.” I hope you enjoy these as much as I do.

Biscuits and Gravy
Nearly everyone I talk to loves to eat biscuits and gravy. If you have a “comfort food” list, this little breakfast gem is probably on it. Making a good country sausage gravy is the challenge where most people resort to the restaurant version, which rarely satisfies me. This recipe does require some skill with a white sauce and does include a reduced carb variation.

Potato Pancakes with Peach Syrup
My unique recipe for a simple and delicious variation on the more well known potato pancakes. These are made with the addition of rice and flour and the potato is pureed into the batter rather than the more "hash brown" style of Latkes. These are suitable as an entrée, as opposed to the side dish role of the traditional version. Serve with a layer of cottage cheese topped with the peach syrup.
